    3. Mix in the Rice: Add the cold cooked rice to the skillet with the vegetables. Use a spatula to break up any clumps and stir until the rice is evenly distributed. Drizzle in the soy sauce and continue to stir for another 2 minutes.
    4. Incorporate the Eggs: Push the rice and vegetables to one side of the skillet. Pour the beaten eggs into the empty side of the skillet. Allow the eggs to cook and scramble slightly before mixing them into the rice and vegetable mixture.
    5. Add the Chicken and Pesto: Return the cooked chicken to the skillet. Add the basil pesto, stirring well to confirm everything is coated with the pesto. Continue to cook for another 2-3 minutes until the dish is heated through.
    6. Finish and Serve: Sprinkle the grated Parmesan cheese over the top and mix until melted and well incorporated. Taste and adjust the seasoning with additional salt and pepper if needed. Garnish with fresh basil leaves if desired. Serve the Pesto Chicken Fried Rice hot.

    Extra Tips:

    For the best results, use cold, day-old rice as it prevents the dish from becoming too mushy. If you don’t have day-old rice, you can spread freshly cooked rice on a baking sheet and refrigerate it for about 30 minutes to achieve a similar texture.

    Additionally, feel free to customize the vegetables based on what you have available or prefer. Adding a handful of spinach or kale can also boost the nutritional value of the dish.
